John Callahan can provide a letter on how your gun left the factory, that is a good start. After that if you are looking to determine if your gun is safe to shoot there are several gunsmiths that specialize in vintage double barrel guns that can do that. It depends where you are and if you want to take it to one yourself or you are comfortable shipping it to one.
If you are trying to determine the amount of original finish on your gun, I think the best way would be to take it to a vintage side by side shoot where we have a table set up and go from there.
There is no "Professional" grading company or person that determines the condition as there are for coins or baseball cards.
If you can post good pictures of the gun with close ups of both sides and bottom of the reciever, the watertable (Reciever under the barrels) Barrel markings, barrel flats and wood to the site you will get some input as to condition.
Hope this helps.
